- Preheat oven to 500°
- Season outside of roast with salt and pepper
- Place roast in a roasting pan, rib side down, and cook for about 20 minutes, until it has a good sear on the outside
- Reduce temperature to 250°
Cooking times vary on ovens and size of roast. Total cooking time is about 10 minutes per lb. Internal temp at center should be 120° for rare.
Allow roast to rest for 30 minutes before carving.
